Cooking With Heathers World - Tomato Soup





Hey everyone,

Today I am back with the first cooking post and the first healthier recipe of the series. Todays recipe is easy Tomato soup, I found this recipe in my mums Mary Berry How to cook book and thought it would be a nice one to do. I love homemade soup and thought this would be the perfect thing to make as you can just freeze it and take out as and when you want it.

The recipe is relatively easy to follow and dosent involve a whole lot of ingredients.

The ingredients you will need are:

  •  1 Vegetable stock cube. 
  • 1 Medium sized Onion chopped. 
  • 25g Butter
  • 25g Plain Flour
  • 2 x 400g cans chopped tomatos 
  • 2 Tbsp Tomato Puree
  • Salt and Pepper 
  • 1 Tsp Caster Sugar
To start of with you need to measure the butter then melt it in a large pan. The next thing you need to do is to dissolve the stock cube in 425ml of boiling water, while this is happening go ahead and chop the Onion into small pieces. 

Add the onion to the melted butter and cook over low heat for 10 minutes or until they are soft, stir occasionally so that they don't burn. Sprinkle the flour over the onion and stir until coated. Then go ahead and add the rest of the ingredients apart from the caster sugar. Put as much seasoning as you like.

Bring this to the boil over a high heat stirring constantly. Then let it simmer for 2-3 minutes while string occasionally. 

Then place a large sieve over a large bowl we used a small one as we didn't have a large one. Then pour the soup into the sieve and press the solids through with a spoon. We done ours in stages with a ladle and we didnt manage to get many solids through. Do not use a blender as you need to get rid of the tomato cores and seeds. 

Finally put the soup back into the pan on a medium heat, bring to a simmer and add the caster sugar. Mix well and then taste, if more seasoning is needed add as much as you feel you need till you get it to your liking, And their you have it easy tomato soup.

You can then go ahead and eat now or freeze until needed. I hoped you like this recipe, I really enjoyed making somthing more healthier and different.
