Baking with Heather- Mini Trifles






Hey everyone,

For todays baking post I thought I would show you how to make mini Trifles. These are the perfect mini desert. I prefer these to a big trifle as not everyone likes it in our house so this is the perfect size for those that do. Using these ingredients we get four decent sized tumblr glasses filled with trifles.

The Ingredients that you will need for this recipe are:

1 packet of Jelly cubes.
8 sponge fingers.
3 tablespoons of Custard Powder.
A Pint of Milk
Half a pint of boiling water
Half a pint of cold
2 sachets of Dream Topping.
A few small pieces of Galaxy for grating.
3 Table spoons of Sugar

To start of with you need to break the sponge fingers and distribute evenly between the glasses. Once this had been done break of the jelly cubes into a measuring jug and add half a pint of boiling water. Stir until it has melted the jelly evenly apply half a pint of boiling water to cool, then divide between four glasses and pour on top of the sponge. It doesn't matter if the sponge isn't at the bottom it will still taste normal. This will take about 40 minutes to set.

Put these in the fridge to set and move onto making your custard. To do this you will need to pour a pint of milk into a measuring jug, then tip most of this into a small pan and heat on stove until warm. Once warm take of stove, add 3 tablespoons of custard powder/sugar to the jug then add the rest of the milk into the jug. Give it a quick stir then pour it all back into the pan.

Once in the pan stir consistently until the custard becomes a thicker mixture and is brought to the boil. This will take around 5 minutes to achieve. If the custard becomes to lumpy or thick add a bit of extra cold milk and stir.
Once the custard is at the right consistency which is thick enough that it will stay on a wooden spoon, take of the heat and let it cool.
To help ease with cooling get a damp dishcloth and place underneath pan while stirring custard. Re dampen cloth as many times as needed to help it cool and not go lumpy. Once cool enough distribute evenly on top of the jelly and let it set.

While letting it set you can go ahead and make your topping, we choose to make Dream Topping but double cream whipped works just as well. It's down to personal preference. To make the Dream Topping pour the sachet into bowl and add milk, whisk with a fork until you get a smooth but firm consistency. If the custard hasn't set this can be kept in the fridge but if it has been set then distribute evenly so that their is a distinct layer.

For topping you can use anything you like, we normally use hundreds and thousands or chocolate sprinkles. For today we decided to grate some Galaxy chocolate and sprinkle this on top.
Leave it to set in the fridge for 10 minutes and their you have it mini trifles.

These are the perfect mini desert for anyone who likes a traditional classic but won't eat a whole one. On average it takes around 1 hour and 30 mins total to make.
